Wendy’s easy chicken burrito recipe

This quick and tasty recipe was provided by food relief recipient Wendy, who has been supported by SecondBite food through Kings Community Care on the Gold Coast.
Wendy has a large, blended family with nine children and has a passion for showing others how to make the most of the food they have at home – or have received in a SecondBite food hamper.
This recipe uses three products – Lilydale Free Range Chicken, Old El Paso Tortillas and Nando’s Peri-peri Sauce – which are donating 20 cents from sales to SecondBite during the Coles Community Food Relief Appeal from 5 August to 1 September 2026.

Wendy says… “This is a fantastic meal for using up vegetables from the fridge and can easily be adapted based on what is available. It’s a simple meal that has helped our family stretch the grocery budget while still putting delicious food on the table.”
Serves 4
Ingredients
- 2 large Lilydale Free Range Chicken breasts, sliced into strips
- 1 red capsicum, sliced
- 1 onion, sliced
- 2 cloves garlic, crushed
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp oregano
- Salt and pepper to taste
- Old El Paso Tortillas
- 1 cup of cooked rice
- ½ cup grated cheese (optional)
- Salad ingredients - such as chopped lettuce or cabbage, grated carrot or sliced tomatoes
- Nando’s Peri-peri Sauce
Method
- Preheat oven to 200°C.
- Place chicken, capsicum, onion and garlic on a baking tray.
- Drizzle with olive oil and season with paprika, oregano, salt and pepper.
- Toss everything together until coated.

- Bake for 25–30 minutes, stirring halfway through, until the chicken is cooked through and vegetables are tender.
- Prepare salad ingredients by grating the carrot and chopping lettuce, cabbage, tomato and any other vegetables you have in your fridge to use up.

- Lay out tortillas and cover with a ¼ cup of cooked rice, a serve of the cooked chicken and vegetable, the salad ingredients you have prepared and a sprinkle of cheese (if using).
- Add a drizzle of Nando’s Peri-peri Sauce over the burrito filling before rolling up and serving.
