Food Relief to Family Favourites: Wendy’s Sausage Roll Recipe

The recipe for these simple and tasty sausage rolls comes from SecondBite food relief client Wendy.

Wendy’s sausage rolls are budget-friendly, freezer-ready, and use ingredients often found in a SecondBite food hamper.
“These freeze beautifully – either cooked or uncooked,” Wendy says.
“I often double the batch and freeze half for quick snacks or lunchbox additions later in the week”.

INGREDIENTS
- 500g sausage mince (beef or pork)
- 1 small onion, finely chopped
- 1 clove garlic, crushed
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tbsp chopped fresh parsley
- ½ cup grated green apple (e.g. Granny Smith)
- Salt & pepper
- 3 sheets frozen puff pastry, thawed
- 1 egg, beaten (for brushing)
METHOD
1. Preheat oven to 200°C (fan-forced).
2. In a bowl, combine sausage mince, onion, garlic, rosemary, thyme, parsley, apple, salt, and pepper.
3. Cut each pastry sheet in half. Spoon the mixture along one side of each piece and roll up tightly.
4. Cut into mini rolls, place seam-side down on a lined baking tray.
5. Brush with egg and bake for 25–30 minutes until golden.
